Wow, the one thing you really miss when you eat paleo/healthy meaning "no more junk!" is BREAD.<br />
<br />
We can't eat the bread they sell. Sheesh! I can't even hardly make my own bread! I mean you could make it with something other than traditional wheat flour, no extra gluten, but you still can't be using traditional yeast if you're fighting a yeast infection or other health issue now can you?<br />
<br />
Well as I delve deeper into the world of What to Eat (sounds like a twisted version of what not to wear, doesn't it?) you discover you CAN eat things you think you can't or shouldn't.<br />
<br />
But bread is the tah mahal of what not to eat isn't it? Well apparently, not anymore. So I was experimenting with Dana Carpender's new cookbook "Fat Fast Cookbook" and discovered her Coconut Flour Bread. Let me just say right now, we almost held a ceremony er... I mean funeral for my wonderful food processor. She had even assured you this wouldn't happen. Maybe it was just too old. But that got me hunting for more because the smell of baking bread was a welcome treat and the taste was such a nice reminder of the feelings that only home-baked goodness can conjure.<br />

I realized quickly that we could save the food processor from further abuse and here is my current "bread" for your "ahem" consumption!<br />

1. Preheat oven to 325 degrees. Grease a small loaf pan (73/4" L × 41/2" W × 3" H).</div>

2. Mix all the dry ingredients together.</div>

4. Add the dry ingredients to the wet and beat well. Batter will be thick.</div>

It's very important to use the xanthan in a no true flour recipe or the results will be very crumbly I'm told. </span></div>

This is such a huge hit. I haven't tried it for sandwiches because I find it too sweet with or without the sweeetener added. But we serve it with either four-fruit jam (my personal fav. or buttered and topped with cinnamon/xylitol sprinkled on top to which I then add pecans and throw in the toaster oven.</div>

I have a friend who asked for tips for his brother who travels a LOT. I mean like really. So here it goes.<br />

I found out that Jamba Juice is now in many airports. Traveling through airports seems to be the hardest places to eat well. I used to carry a lot of snacks with me and a bottle of water. Not sure if the food would be confiscated at check-in. Well thank God for real food choices finally!<br />

In Airports and elsewhere opt for fruit bowls, veggie bowls, avoid salad dressings since they have bad oils like soy, better to add in your own good fats like guacamole or salsa.<br />
Low-Calorie dressings are better. No good fats, but also, none bad. <br />
<br />
Coconut chips, or even a jar of coconut oil that you can use to stir into your food to increase the fats.<br />

In restaurants your best bet is to try to find the menu online and look for allergy menus. Very helpful to identify all the bad ingredients like soy oil, soy protein, and other things such as gluten, wheat, sugar, dairy, it you are avoiding milk products.<br />
<br />
Also be really polite but not afraid to ask questions of the servers. You can always reward them later for being so understanding with an extra tip.<br />
<br />
Remember to also take ginger for travel if you need it. It's works better than Dramamine and you'll feel so much better. (Side affects, anyone?) Take it by tea or even the candy in health stores. I always carry tea wherever I go like this.<br />
<br />
I hope these help you stay healthy, happy and satisfied until you can eat your own familiar food again.<br />

It actually came out a beautiful deep pink and is it ever powerful! It may be the most potent batch of kraut I have made to date.</span></div>

There is a lot of new information available thanks to the fact that so many people have discovered the virtues of fermenting their own food. I also learned that making fermented foods is a more powerful way to get your probiotics besides taking capsules. That thought just nagged at me. “I really need to make some sauerkraut again.” The thing is once I do make it, the stuff never lasts very long around here. My husband just loves the stuff. Which is great since he needs it as much I do.</span></div>

I did this by taking a plastic bag sealed with water and putting it in the top after I pressed the cabbage down inside my jar. I just use the old fashioned jars that clamp. Maybe a new fangled jar would make better kraut but since it's always given me great results in the past I'm quite pleased. Besides, it seems by using the bag in the top it did improve the potency of the probiotics. I am quite sure the results are quite powerful. So much that I have to be careful with this recent batch not to eat too much at a time!</span></div>

Skip butter and oil and use 4 Tablespoons lard (full of

Heat butter and oil in large cast iron Dutch oven pan or large saucepot
over medium heat.<span style="mso-spacerun: yes;"> </span>Add onion, celery and
carrots.<span style="mso-spacerun: yes;"> </span>Cook till soft and translucent
about 5 minutes,<span style="mso-spacerun: yes;"> </span>Add thyme, bay leaves,
garlic, ground beef and sausage and cook for 3 more minutes.<span style="mso-spacerun: yes;">
</span>Let the flavors really develop and let everything get a little
brown.<span style="mso-spacerun: yes;"> </span>This makes the soup very similar to a good
gumbo despite the fact there is no brown roux.<span style="mso-spacerun: yes;">
</span>(Yes, I do know how to make a true Southern Louisiana Gumbo, even though
I grew up far north from our southern borders, trust me on this, especially if
you are a Cajun.)</div>

You take an egg and separate the white and mix in a little shredded coconut. Then make a little nest with it in your frying pan sizzling with butter and put the egg yolk in the center and cook like sunny side up or if you're like me easy over! It's that easy. I think this might be my new favorite thing to eat. So filling! Sprinkle just a little sea salt and now it's all salty sweet. Yum! <br />

This recipe adapts to any chicken 2-4 pounds. It is adapted from the directions that came
with the Infrachef Halogen Oven for Roasted Chicken. It is also inspired by Jamie Oliver.</div>

Take a mortar and pestle and in it place,</div>
<div class="MsoNormal">
<br /></div>
<div class="MsoNormal">
2 tablespoons butter</div>
<div class="MsoNormal">
1 tablespoons olive oil (any will do)</div>
<div class="MsoNormal">
Pinch of sea salt</div>
<div class="MsoNormal">
3-4 garlic cloves peeled and smashed with a knife</div>
<div class="MsoNormal">

<br /></div>
<div class="MsoNormal">
Take this mixture and mash it to a creamy paste, doesn’t
need to be smooth.</div>
<div class="MsoNormal">
Place the fresh whole chicken breast side up on the lower
rack in the halogen oven.</div>
<div class="MsoNormal">
Run your finger between the breast and the skin of the
chicken on each side of the breastbone.</div>
<div class="MsoNormal">
Shove some of the garlic butter mixture under the skin. Then do the other side of the breastbone.</div>
<div class="MsoNormal">
Take a sharp knife and cut little pockets in the thighs and
wings on each side of the chicken and place the rest of the garlic butter
mixture in the slits you made. Evenly distribute the mixture. Rub your buttery hands all over the top of
the breast over the skin. You can
lightly salt the skin at this point.</div>

Now take a good quality curry powder and sprinkle it all
over the breast, wings and thighs. Doesn’t
have to be perfect. You can rub it
around if you like but it is not necessary.</div>

Now turn the chicken over so the breast is facing down. Place
lid on oven.</div>

Set the temperature at 400F. for 25 min. When the timer finishes, turn the chicken
breast side up and cook for 30 minutes.
Open lid and let sit for 10 minutes.</div>

While the chicken is resting take full fat yogurt and put</div>
<div class="MsoNormal">
large spoonful of yogurt in a small bowl depending on how
many people you are serving.</div>

Sprinkle into this curry powder, turmeric, cinnamon and
flower pepper or black pepper, freshly ground.
Stir and taste and adjust seasoning if necessary.<br />
Serve with the chicken.<br />

Thinking about it I realized I should expound more on the many great ways to get iodine into your diet and into your life.<br />

Sea vegetables are an excellent source of iodine and other trace minerals. Sea kelp is available as granules you can sprinkle on your food. I like to add it to soups. But you can also put it on your salads, casseroles or any other dish that you like. For your convenience kelp also comes in tablets and capsules so you can just take it with your other daily supplements. <br />

Another fun and delicious way to get your iodine is with tasty snacks. Seaweed crackers and nori treats are available online and in your local health food stores. Asian or Thai markets are another great resource to find products made with seaweed.<br />
<br />
Dried fish or fish sauce also have good amounts of iodine In them.<br />
Iodine boosts your metabolism and keeps your thyroid in good shape. Which also helps your immune system and can help you lose weight. Or gain weight if you need it.<br />

I think getting plenty of iodine is not just important for people with thyroid issues.<br />

Then serve with plenty of butter, cream or coconut oil.</div>

Did you know that when a new drug hits the market, you should wait at least 2 years before taking it?<br />

Well, how about this. Would you knowingly buy a lemon of a car? No, you would not want to do that.<br />

Well, taking new drugs based on trials run by drug companies is reallly a little like playing Russian Roulette with your health.<br />

While we're at it. This is another reason why I would stay as far away from a drug trial as the earth allows in distance. There is no such thing as a free ride in medication and many people have either died or been seriously, irreversibly injured on these trials.<br />

Trials seems to be an appropriate term. We could just go ahead and call it Trial by Fire.<br />

Hey, I'm not condemning every drug out there. I seem to remember that they used to actually do some good for people and there are still a few out there. Just don't be too quick to believe that popping ANY pill will be the dissolution of all your problems. A few nights ago I went out to eat. I try to avoid eating breads and starches much so I thought I should try the gluten-free pizza. I figured it would be pretty tasty. I like many of the dishes from this restaurant. By the way a lot of restaurants now carry special menus which list items with gluten, msg, and other allergenic foods.<br />
<br />
Well, I was sadly disappointed with the crust. It was not something I would ever order again. I will either just eat regular pizza and skip the crust or just order something else.<br />
<br />
So, since all of you gluten-free people out there have my utmost sympathy. Plus it isn't really healthy for anyone to eat so much wheat particularly when it isn't properly soaked or sprouted. This is my recipe for gluten-free pizza.<br />
<br />
The other great thing about this is that a lot of products on the market though gluten-free are still full of too many chemicals. That really isn't going to be a great idea since wheat is usually only one of our problems with food today.<br />
<br />
I have another recipe called Pizza Quiche that is very tasty. It was concocted by a man who has lost over 100 pounds eating almost no starches. Yet it is kind of involved and has a lot of ingredients. I kept thinking, we need to come up with something quick and easy. I was hungry, NOW!<br />
<br />
Then I realized VOILA! The italian omelette, the frittata. You can make anything into a delicious meal with a few eggs and some leftover ingredients. So here it is.<br />
<br />
Pizza Frittata<br />
<br />
Take 2-3 cage-free eggs and beat them til uniform with a fork. Season with a little sea salt and fresh ground pepper. Set aside.<br />
<br />
Put a little butter and olive oil in a fairly large cast iron skillet and heat till butter melts.<br />
<br />
Add chopped garlic, onion, any color slivered bell peppers and heat till nice and soft. I also throw in chopped turkey bacon and grilled eggplant from Trader Joes's at this point. (It also has artichoke hearts which you can see in the picture. yum!)<br />
<br />
Next add the egg mixture and try to get it a little on the thin side so that the outer edges get nice and crispy like a crust.<br />
<br />
When underside is almost cooked, place under the broiler in the oven for 2 minutes until it starts to get bubbly.<br />
<br />
Grab some marinara sauce (preferably organic with fresh herbs) and some shredded mozzarella and spread the sauce and sprinkle the cheese all over the omelette.<br />
<br />
Place back under the broiler and watch till nice and bubbly.<br />
<br />
Slice into pizza triangles and enjoy. his elderly patients, who were feeling poorly, thyroid <br />

sandwiches, they felt years younger.<br />

I don't know about you but I am not planning on eating those <br />
<br />
sandwiches anytime soon. Yuck! Besides, how would you make <br />
<br />
them? I know that some people also take raw thyroid in pills <br />
<br />
and I also have done this.<br />
<br />
This is actually even better than that because it has all the <br />
<br />
nutrients from the head of the fish, not just the thyroid. <br />
<br />
That's very important since we need all of it. So it is full <br />
<br />
of iodine and many other goodies. Besides, wouldn't you much <br />
<br />
rather eat gourmet food than just pop pills?<br />
<br />
Spanish Fish Stew<br />
<br />
1/4 cup olive oil<br />
2 medium onions<br />
3 cloves garlic, finely minced<br />
1 stick celery, finely chopped<br />
1 green pepper, finely chopped<br />
1 large can plum tomatoes<br />
1 1/2 teaspoons dried red pepper flakes<br />
1 bay leaf<br />
4 cups fish fumet (recipe follows)<br />
Salt and freshly ground pepper<br />
2 pounds fresh wild red snapper, cut in 3 by 2 inch pieces<br />
<br />
Heat olive oil gently in a deep saucepan. Add onions, garlic, <br />
<br />
celery, and green pepper and cook a few minutes until <br />
<br />
transulucent on medium heat. Be careful not to burn the <br />
<br />
garlic.<br />
<br />
Add tomatoes, red pepper flakes, bay leaf and fish stock and <br />
<br />
cook for about 10 minutes. Add salt and pepper to taste.<br />
<br />
Add red snapper and cook covered for 5 minutes.<br />
<br />

Quick Fish Stock<br />

Just a nutritious as stock made with heads and carcasses of <br />

2 quarts cold water<br />
1/4 cup vinegar<br />
<br />
Put all ingredients in a saucepan and bring to boil. Skim. <br />
<br />
Lower heat and simmer 2-3 hours. Let cool and strain. Use <br />
<br />
right away or freeze for later.<br />

I have tried many different supplements over the years to relieve the symptoms of chronic fatigue. I just never had much energy most days. I tried many different products and different herbs. Some of them did help, some I couldn't tell any difference at all. What I realized though was that I wasn't making the most important change. Diet. I spent so much time taking supplements of every kind but didn't eat very much at all. I knew that had to change. Now I realize it is the most important single thing you can do to recover your health. <br />
<br />
I heard about this egg drink to help my stomach for candida albicans and started making it. This has brought back all my energy. I think it's all the fat. The surprising thing is I did this to just get rid of IBS (thank you painkillers) but I have energy every day now and I have so far lost about 45 pounds. <br />
<br />
Raw Egg Drink (see note if you don't want to use eggs raw, I like the energy it gives)<br />
<br />
Ingredients <br />
•2-3 large whole eggs (or 3-4 medium size), preferably "certified organic" free-range<br />
•2 tablespoons virgin coconut oil <br />
•2 tablespoons unsalted butter (should be organic or certified organic, but no hormones or antibiotics, preferably). Raw, grass-fed would be the ideal. <br />
•1 teaspoon ground cinnamon, or to taste <br />
•1/2 teaspoon ground nutmeg, or to taste <br />
•1-2 teaspoons Blackstrap Molasses <br />
•2 to 2 ½ cups of warm water (use boiling water if you don't want it raw)<br />
<br />
Other spices can be added to suit your taste, i.e. ground clove, allspice, ginger, etc. <br />
<br />
Sometimes I add berries and cocoa powder.<br />
<br />
For pain relief I add to this turmeric and some curry powder. About 1/4 tsp each. <br />
<br />
I make this in a jar or blender cup with my hand blender.<br />

Here is a delicious recipe for mayonnaise.<br />

It is quick and easy to prepare. Especially if you own a hand blender, you can whip up any sauce or drink in no time. And since you can make all your own dressings, it is an indispensable appliance to have.<br />
<br />
A traditional mayonnaise usually has 2 egg yolks, but you can make it just as easily with one egg instead. This also solves the problem of what to do with the extra egg whites.<br />
I also see that people are trying to make it with just flax oil. That sounds horrible tasting and actually not as beneficial health-wise as you might think. If you mix together part flax and olive oil, you end up with a perfect ratio of omega fats that is healthy AND tasty. When you make it with raw vinegar, it is also probiotic.<br />
<br />
Tasty, healthy and full of enzymes, now that’s what I call the perfect mayonnaise.<br />

1 cup oil (sesame oil, expeller expressed, plus 1 tablespoon flax oil)<br />

Let settle 30 seconds and then pulse the hand blender on and off in spurts. Use the little blade with holes in it for whisking if it’s a Bamix or the chopping blade works great if that’s the only blade you have. Then gradually raise and lower the blender as it becomes thick. It goes quick.<br />

Tip: If you make this in a mayonnaise jar you wont have to transport it from the beaker. Just put on the lid and your done and everyone can see that it’s mayonnaise in the fridge!<br />

And if your in the market to buy a hand blender I recommend the Bamix from Switzerland. Don’t buy a poor quality one, you will be wasting your money. I also don’t recommend the kind that have batteries because they will die on you long before they should. (I know, cause that’s what happened to me). Bamix is Swiss and they have been making these for over 50 years now. The blades are the highest quality and even the low end blender is more powerful than cheaper brands. It should last at least 10 years. I’ve had mine about 5 now and it runs like a top. One of the reviewers at Amazon claims theirs is over 30 years old! If mine lasts that long I may be passing it down to my grandchildren! I use it every day to make shakes for breakfast. Clean-up is around 30 seconds. It also hangs on the wall by the sink and has a little storage section for all the blades. No fumbling through drawers for little parts during a cooking operation. And never mash potatoes by hand again. That’s probably the hardest thing to do when your arm muscles have grown weaker. It comes with a great little recipe book and you can get more accessories for it to expand its usefulness and use it like a food processor. You can also use it to puree creamy soups. No more ladling hot soup into the blender. Which is a very messy and slightly dangerous chore.
